2007 Vintner Select Cabernet Sauvignon
Clone 337 Cabernet Sauvignon is a perfect fit for the western-most vineyard blocks on our property. Grapes from our Carolyn’s and Rim Rock blocks were harvested on October 24th and November 3rd, after two weeks of Indian Summer helped them to achieve perfectly ripe flavors and nutty, integrated tannins. The wines were fermented separately in stainless steel vats and were aged separately in French oak barrels for thirteen months. The final cuvee was then assembled and allowed to marry in barrel for an additional five months. The wine displays a stunning pure Cabernet character, expressing red cherry, ripe plum, blueberry, rose petals and smoke. The texture on the palate is lithe yet structured, with an endlessly sumptuous mid-palate exploding onto a framework of ripe tannins.
