2000 Reserve Cabernet Sauvignon
When a certain highly esteemed East Coast wine writer tasted this wine out of barrel last summer he put his glass down, closed his eyes and said, “THIS is a show-stopper.” Combining 98% Cabernet Sauvignon with a light spicing of 2% Petit Verdot, the 2000 Reserve Cabernet Sauvignon is an extraordinary and thoroughly ripe, mountain Cabernet Sauvignon. Cab to the core, the fruit displays a profuse aroma of black cherry and spice, while rich ripe flavors of black fruit, framed beautifully in firm and elegant tannins, coat the entire palate for several minutes on end. Balancing this tannin spectrum is a delightful middle, providing a delicious fullness that slowly resolves as berry and cedar tones sustain in a long lingering finish.
